If meals were meant to be made from last year’s crops, you’d find tin can plants at the local nursery.

Chefs here are passionate about what’s on the plate, but they can be downright maniacal about what goes into what goes on the plate, too. In a good way, though. That’s why you’ll often find them setting down their knives and picking up a basket at a farmers market. Some even forage their own morels or have secret huckleberry groves. You see, in Oregon, local ingredients are king, and chefs move in seasonal rhythms to compose menus based on what’s fresh, rather than what’s in the storeroom. There’s nothing finer than a fine meal followed by a feather pillow in a cozy inn.
