There’s a cheesemaker in Southern Oregon who buys milk from a single dairy because he likes the way the grass tastes.

Drive along just about any road or scenic byway in Oregon and you’re bound to see the signs. They’re usually handmade, which reflects perfectly what’s going on inside the cozy buildings they’re advertising. And inside those creameries, chocolate shops, bakeries and mills are food artists living the American culinary dream. They spend their days making small-batch goat cheese, truffles with fillings from their own berry farm, or bread from organic wheat raised in Eastern Oregon. They do it for one reason: to hear you say “yum”.
