Congratulations to Kitty for winning the Distiller Cuisinternship!
Among the ponderosa pines and lava cones, where the sun shines 300 days a year, Kitty will learn the art and science of crafting boutique gin and vodka. From flavor profiling to infusing to hand bottling, Kitty will find out what makes artisan spirits so special. She can take a break to climb Smith Rock, raft the Deschutes or mountain bike down Mt. Bachelor, and when she’s done, you can bet there will be an ice-cold cocktail with her name on it.

Central Oregon is all about choices: should you ski, golf, hike, bike, or cast a fly? Whatever you do to recreate, there are even more options for how to satiate that inner gourmand. Visit a local brewery, meet a maker of fine goats cheese, or see how creative chefs can be when they come off the slopes and head for the kitchen.

About The Distiller

Jim Bendis / Bendistillery
Bend, Oregon

Jim Bendis loves to run. In Central Oregon, that usually means treks through the high desert where juniper trees are common foliage. Juniper trees produce berries, lots and lots of juniper berries, the defining botanical in gin. It was during these fits of jogging that Jim asked himself an inspirational question: why couldn’t someone produce gin in a place where the spirit’s prime flavor agent grows wild? And so Bendistillery was born. The name came easy: he lives in Bend, his name is Bendis, and he started a distillery.

Like many successful entrepreneurs, Jim started his now-thriving craft spirits business in a common location: his garage. Jim founded the distillery in 1996 with the goal of reviving the tradition of handcrafted American gin and vodka. What began as a hobby producing and selling a few hundred cases a year in Oregon, is now an industry leader in the burgeoning craft distilling industry, selling 25,000 cases last year in nearly a dozen states.

Located in the high desert of Central Oregon, Jim infuses his spirits with pure Cascade Mountain water, along with botanicals and grains grown on his 24-acre farm near Tumalo.

The Curriculum

  • Learn the art and science of crafting boutique gin and vodka
  • Taste when the spirit is ready and how gin develops its flavor
  • Hand bottle a batch of spirits
  • Learn how to create the flavors of Mazama Infused Pepper Vodka and Cofia Hazelnut Espresso Vodka
  • Help lead a tour of the distillery and tasting room
  • Bike, hike, golf, shop and cocktail with the friendly locals of Bend

Meet the Judge: Entries for the Distiller Cuisinternship were  judged in part by “The Cocktail Chronicles” blogger Paul Clarke. In addition to his blog, Paul is a contributing editor at Imbibe magazine and has written articles on spirits and cocktails for a variety of outlets including the San Francisco Chronicle, Wine & Spirits and the New York Times’ “Proof” blog.
